The basic principle in all model types remains the same, in that a head of steam is built up and forced through coffee grounds. The method of pressurizing the liquid varies depending on the type of machine. The basic models use steam pressure; the piston model uses a piston to build the pressure and the pump models use an electric pump to make an espresso.

Dozens of companies now make espresso machines ranging in size and application from basic one cup models to large commercial machines. Some of them are – the Conti of Monte Carlo and Briel of Portugal. They all make a wide selection of machines – cater to restaurants, hotels, other commercial ventures and private homes.
